To everyone who believes that the hardest part of cooking is deciding what to cook, I’ll be sharing what I’m making during the week every other week. The recipes will shift and change throughout the seasons, but the goal remains the same: make weekday cooking easy and hassle-free.
Previously, I’ve not been the biggest fan of January, but this year, I’ve been loving it. It’s been cold, but sunny, the winter produce has been AMAZING, and citrus season is in full swing.
That said, this might be one of my favorite “what I’m making this week” posts yet! I’m finally sharing the tofu nuggets I’ve been obsessed with for the past 6 months (and the honey mustard sauce that I can’t get enough of)!! Plus, a very citrus-forward salad I’ve been making on repeat, along with my favorite egg sando.

Sun-Dried Tomato Egg Sando: This has been my hyper-fixation lunch for the past 3 months - it’s simple, unfussy, and so nutritious (did I mention that it tastes amazing?). I don’t have a recipe for this but here are the basics: pan-fry 3 or 4 eggs in butter, spread a generous amount of sun-dried tomato pesto on toasty sourdough, sprinkle over some nooch, kosher salt, and black pepper, and add the egg. And wrap it in parchment paper to make it feel like a sando!
Crispy Tofu Nuggets: I’m a woman obsessed with these tofu nuggets - I’ve been batching these every Sunday and keeping them on hand as an easy lunch/dinner. Plus they taste amazing chopped into a caesar salad!!
Citrusy Shaved Fennel Salad: This slaw-inspired salad heavily leans on seasonal produce (which is why I love it so much). It’s a combo of shaved fennel, cabbage, grapefruit, and pistachios. Along with a grapefruit dijon vinaigrette that I’ve been putting on everything!!
Been pairing this salad with my tofu nuggets - it’s the perfect hearty and balanced meal! This salad also tastes amazing on sandwiches.
